THIS is how you know that Spring has truly arrived in Vermont (believe me, sometimes its hard to see!)....maple sugar 'farmers' start tapping the trees for this amber gold.....pour in on snow and eat it as it congeals.....a side of pickles cuts the sweetness just enough to keep you from going into sugar shock!....they have an expression here ...."let's see how it all sugars out".....sort of a Vermont version of "lets wait and see"...sometimes the harvest is just ok....and sometimes it is amazing.....
